Job Title: Head Mixologist

We are seeking an experienced, creative, and commercially minded Head Mixologist to take full ownership of our rooftop bar programme. The successful candidate will be responsible for the overall beverage operation, including cocktail development, recipe and service standards, stock control, cost management, team training, and guest experience. The ideal candidate must have strong knowledge of cocktails, spirits, mixology techniques, bar operations, and inventory management, with the leadership ability to build and maintain a high-performing bar team.
Take full ownership of the rooftop bar programme and daily beverage operations. Develop and maintain a distinctive cocktail programme aligned with the brand and target clientele. Create innovative signature cocktails, seasonal menus, and beverage experiences. Ensure the bar is properly set up, stocked, organised, and ready for service at all times. Maintain high standards of cleanliness, hygiene, safety, and organisation.
Develop and maintain standardised recipes and preparation procedures for all cocktails. Ensure consistency in taste, quality, portion, presentation, garnish, glassware, and service. Train and supervise bartenders on cocktail recipes, techniques, presentation, and service standards. Conduct regular quality checks and tastings. Maintain accurate recipe cards, preparation guides, and cocktail specifications. Ensure all cocktails are prepared according to approved standards and specifications.
Take full responsibility for bar inventory and stock control. Establish and maintain appropriate par levels for spirits, wines, beers, mixers, garnishes, and other bar supplies. Monitor daily stock usage, wastage, breakages, transfers, and variances. Conduct regular stock counts and investigate discrepancies. Prepare and manage beverage requisitions and stock orders. Monitor beverage costs and minimise unnecessary wastage and stock losses. Ensure proper storage and handling of all bar products. Work closely with Management, Procurement, and Finance to maintain effective beverage cost control.
Lead, supervise, motivate, and develop the bar team. Train bartenders on mixology, product knowledge, cocktail standards, guest service, and upselling. Establish clear performance and service expectations. Monitor staff performance and provide coaching and feedback. Assist with recruitment, onboarding, and training of new bar team members. Lead by example during busy and high-volume service periods.
Deliver an exceptional and memorable cocktail experience to guests. Engage guests professionally and provide knowledgeable recommendations. Promote signature and premium beverages to increase bar revenue. Respond professionally to guest feedback and complaints. Identify opportunities to improve the guest experience and increase beverage sales.
Ensure compliance with company policies and all applicable food safety, hygiene, and responsible alcohol-service requirements. Ensure all bar equipment is properly used, cleaned, and maintained. Maintain safe working practices within the bar and rooftop environment. Ensure the team consistently follows operational and hygiene standards.
Qualifications & Requirements
4–6 years' experience in mixology, bartending, or professional bar operations. At least 2 years' experience in a senior, supervisory, or Head Mixologist role. Proven experience managing or developing a cocktail/bar programme. Strong knowledge of classic, contemporary, and signature cocktails. Excellent knowledge of spirits, liqueurs, bitters, wines, beers, mixers, and bar ingredients. Strong understanding of beverage costing, stock control, inventory management, and wastage reduction. Experience training and supervising bartenders. Strong communication, leadership, and interpersonal skills. Excellent attention to detail and commitment to consistency. Ability to work effectively under pressure in a fast-paced hospitality environment. Professional appearance and excellent guest-service skills. Hospitality, Mixology, Bartending, or related professional certification is an added advantage.
